Almond crusted cod
1.5 cups course almond flour or if using regular bagged almond flour, go for about 1/2 cup. For purification, use cauli bread crumbs or other gluten-free, clean bread crumb.
6 garlic cloves chopped finely
1/2 cup chopped, assorted fresh herbs (dill, thyme, parsley)
1 tsp sea salt
juice of 1/2 lemon
1 egg
4 cod fillets (or other mild white fish)
dash of black pepper
Preheat oven to 275.
Mix all ingredients (except fish) in a medium/large bowl. Place fish into a lightly greased baking or casserole dish, and add mixture on top and sides of fillets. Bake about 55 minutes.
This recipe cooks for 1 hour at low heat, making it moist and delicious. Serve with a green vegetable and side salad!
You can sub out almost any white fish you'd like, ie haddock, trout, etc.
At nearly 20g of protein per serving, this is a perfect post workout meal.
