Veggie Egg Scramble: Breakfast for one
If you read my blogs you already know eggs can be a very important part of a healthy day. Here's a great breakfast for one: (double or triple for family size)
Because I'm not the most graceful cook, I usually end up with more of an egg scramble than an actual omelet, but damn it's still delicious!
1 Tbsp organic butter
2-3 whole organic eggs with yolks!
¼ cup organic milk (or unsweetened coconut or almond milk)
1-2 oz shredded cheese of choice ( I love swiss, or sharp cheddar)
3 vegetable minimum (mushrooms, onions, peppers, garlic, tomatoes, spinach)
Sea salt & pepper to taste
Chop the veggies and toss into a skillet with the butter on medium heat. The key is to keep them nice and colorful! In the meantime, whisk the eggs and the milk together in a medium bowl. After about 3 minutes, pour the egg mixture on top of the veggies and stir. Lower heat to med/low, stirring slowly as the eggs begin to cook, then sprinkle the cheese and stir to combine.
Add a touch of sea salt & pepper and transfer to a plate.
*I've recently developed a liking for a small side-salad next to my eggs. It makes for a really nice temperature contrast. Nerd alert!
