Arugula Fig Salad with Goat Cheese, and Creamy Orange Viniagrette

Arugula Fig Salad with Goat Cheese and Creamy Orange Viniagrette is one of my favorite summer salads. Feel free to top with tofu or chicken to make it a perfect stand alone meal

This peppery salad paired with a soft citrus viniagrette makes total sense! If you're feeling fancy, you can caramelize your walnuts in a skillet with 1 tbsp coconut oil, cinnamon, and a touch of sweetener (raw honey, raw agave, stevia)  to taste, but definitely not necessary.

6 cups organic arugula
1.5 cups raw walnuts
3 oz goat cheese, crumbled
½ cup chopped figs
2 tbsp chopped fresh mint
freshly ground black pepper

Orange viniagrette
juice of one orange
1 tsp ginger, minced
1 tsp raw honey
2 Tbsp organic plain yogurt
pinch sea salt
blend in food processor until smooth
