1.5-2lbs lean pork tenderloin
1 Tbsp dijon mustard
1 Tbsp real maple syrup (not Aunt Jemima)
1 large sweet onion
1 large apple
1 Tbsp Chinese 5 spice
1 tsp fresh chopped fresh thyme
salt & pepper to taste
This one's definitely a keeper! For Purification Friendly, sub raw honey for the maple syrup
Chop the apple and onion into medium sized pieces and add to your slow cooker. Sprinkle with salt & pepper. Seduce your pork tenderloin by rubbing it with the Chinese 5 spice, dijon mustard, thyme, salt &pepper. Lay the pork on top of the onion & apple mixture and drizzle with the maple syrup. Set your slow cooker on low setting (approx 7- 8 hours). Go to work, and come home to an amazing smelling house. No need to add liquid because the apple and onion will release theirs!
*Perfect additions- roasted sweet potatoes & sauteed greens. You can even add the greens right into the slow cooker and cook them down from there so they soak up the delicious juices and it’s one less dish to wash!
